Ingredients
1 lb ground beef (or turkey for a lighter option)
2 cups diced potatoes
1 cup chopped carrots
1 cup chopped celery
1 cup diced onions
4 cups beef broth (or vegetable broth for a vegetarian version)
1 can (15 oz) diced tomatoes, undrained
1 can (15 oz) kidney beans, drained and rinsed
2 tsp garlic powder
2 tsp paprika
1 tsp ground cumin
Salt and pepper to taste
1 cup corn (fresh or frozen, optional)
1 tbsp hot sauce (optional)
Instructions
Brown the meat: In a skillet over medium heat, brown the ground beef until cooked through. Drain excess fat and add to the slow cooker.
Prepare the vegetables: Chop the potatoes, carrots, celery, and onions. Layer them on top of the browned meat in the slow cooker.
Add canned ingredients: Pour the diced tomatoes (with juice) and kidney beans over the vegetables.
Season the mixture: Sprinkle the garlic powder, paprika, cumin, salt, and pepper over the mixture. Stir gently to combine.
Pour in the broth: Add the beef broth (or vegetable broth), ensuring all ingredients are submerged.
Set the slow cooker: Cover and cook on low for 360 to 480 minutes or on high for 180 to 240 minutes until vegetables are tender. Stir occasionally if possible.
Final touches: If using corn or hot sauce, stir them in during the last 30 minutes of cooking.
Serve: Once cooked, taste and adjust seasoning as needed. Serve hot with crusty bread or over rice.
Notes
Customize the stew with your favorite seasonal vegetables, and taste as you go to adjust seasonings.
