Ingredients

  • 4 ripe bananas, sliced
  • 1 cup dairy-free white chocolate chips
  • Dark chocolate chips for eyes
  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/3 cup almond butter
  • 1/4 cup maple syrup
  • 1 tablespoon pumpkin spice
  • 4 cups rice cereal
  • 1 cup marshmallows (vegan)
  • 1/4 cup coconut oil
  • Green food coloring or spirulina powder
  • 4 apples, sliced
  • 1/2 cup almond butter
  • Dark chocolate chips or raisins for decoration
  • 1 banana
  • 1 cup spinach
  • 1 cup almond milk
  • 1/2 cup frozen blueberries
  • Optional: chia seeds for added texture

Instructions

  1. Melt the chocolate: In a microwave-safe bowl, melt the dairy-free white chocolate chips in 30-second intervals, stirring in between until smooth.
  2. Dip the bananas: Dip each banana slice halfway into the melted chocolate. Place on a parchment-lined baking sheet.
  3. Add eyes: While the chocolate is still warm, use dark chocolate chips to create eyes. Let the pops set in the freezer for about 10 minutes.
  4. Mix ingredients: In a bowl, combine oats, pumpkin puree, almond butter, maple syrup, and pumpkin spice. Stir until everything is well combined.
  5. Form balls: Use your hands to form the mixture into bite-sized balls.
  6. Chill: Place the energy balls in the fridge for at least 30 minutes to firm up.
  7. Melt marshmallows: In a pan over low heat, melt marshmallows and coconut oil, stirring until smooth.
  8. Add cereal: Remove from heat and mix in rice cereal and green coloring until evenly coated.
  9. Form into shapes: Press the mixture into a greased pan and let it cool. Once set, cut into monster shapes and decorate with eyes.
  10. Slice the apples: Cut apples into wedges and remove the core.
  11. Spread almond butter: Spread almond butter on one side of each apple slice.
  12. Decorate: Use dark chocolate chips or raisins to create spooky faces on each apple wedge.
  13. Combine ingredients: In a blender, combine banana, spinach, almond milk, and frozen blueberries. Blend until smooth.
  14. Serve: Pour into glasses and enjoy the vibrant green color, perfect for Halloween!
