A comforting, quick, and family-friendly soup featuring tender chicken and bright lemon flavor.

Ingredients

  • 1 pound boneless, skinless chicken breast
  • 6 cups chicken broth (preferably low-sodium)
  • 1 cup egg noodles (or any pasta of your choice)
  • 2 lemons (juiced, with zest optional)
  • 2 cloves garlic (minced)
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)
  • Optional: Sliced carrots or celery
  • Optional: A dash of red pepper flakes

Instructions

  1. Prepare the broth: In a large pot, bring the chicken broth to a rapid boil over medium-high heat.
  2. Cook the chicken: Add the chicken breasts to the boiling broth and cook for about 15 minutes, or until fully cooked and tender.
  3. Shred the chicken: Remove the chicken from the pot and let it cool slightly. Shred the chicken with two forks and set aside.
  4. Cook the noodles: Add the egg noodles to the boiling broth. Cook according to package directions until al dente, typically 5-7 minutes.
  5. Combine ingredients: Stir in the lemon juice and shredded chicken. Adjust seasoning with salt and pepper to taste.
  6. Serve: Ladle the soup into bowls and sprinkle with fresh parsley for garnish. Enjoy hot!

Notes

Avoid overcooking the chicken and noodles for the best texture. Fresh lemon juice greatly enhances flavor.
