Ingredients
1 pound boneless, skinless chicken thighs
2 tablespoons yogurt
1 teaspoon garam masala
1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon coriander
1 tablespoon ginger-garlic paste
1 medium onion, finely chopped
1 cup diced tomatoes
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Lemon wedges (optional)
Instructions
Marinate the chicken: In a mixing bowl, combine yogurt, garam masala, turmeric, cumin, coriander, ginger-garlic paste, salt, and pepper. Add the chicken thighs, coating them evenly. Let this marinate for at least 15 minutes.
Cook the onions: In a large skillet over medium heat, cook the chopped onions until they are soft and slightly caramelized, about 5-7 minutes. Stir occasionally to avoid burning.
Add tomatoes: Lower the heat and add the diced tomatoes to the pan. Stir and cook for about 5 minutes until the tomatoes break down and form a sauce.
Brown the chicken: Increase the heat to medium-high. Add the marinated chicken thighs to the pan. Cook for 5-6 minutes on each side, until browned and cooked through.
Simmer: After browning, lower the heat again and allow to simmer for 10 more minutes. Stir occasionally.
Garnish and serve: Remove from heat, garnish with chopped cilantro, and serve hot with rice or flatbread.
Notes
For better flavor, marinate the chicken longer. Adjust spice levels according to preference.
