A comforting and nourishing homemade chicken soup recipe, perfect for cold days and family meals.

Ingredients

  • 1 whole chicken
  • 8 cups chicken broth
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine the whole chicken, chopped carrots, celery, onion, minced garlic, and chicken broth in a large pot.
  2. Bring to a boil over medium-high heat, then reduce the heat and let it simmer for about 60 minutes, or until the chicken is cooked through and tender.
  3. Carefully remove the chicken from the pot and allow to cool for a few minutes, then shred the meat, discarding the bones and skin.
  4. Return the shredded chicken to the pot. Add dried thyme, salt, and pepper, and stir to combine, simmering for an additional 20 minutes.
  5. Serve hot, garnished with fresh parsley.

Notes

Using a whole chicken helps to create a rich, flavorful broth. You can substitute with chicken thighs or breasts if preferred.
