Delightful and nutritious pancakes with a spooky twist, packed with whole grains and spinach, perfect for Halloween breakfast.

Ingredients

  • 1 cup spinach (blended)
  • 1 ripe banana
  • 1 cup milk (or dairy-free alternative)
  • 2 eggs
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Coconut Ube sauce (for drizzling)

Instructions

  1. Blend Wet Ingredients: In a bowl, mix the blended spinach, banana, milk, and eggs until smooth.
  2. Prepare Dry Mixture: In another bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
  3. Combine Ingredients: Gently mix the wet ingredients into the dry ingredients until just combined. Be careful not to overmix; a few lumps are okay.
  4. Heat the Skillet: Preheat a non-stick skillet over medium heat. You can lightly grease it with cooking spray or a small amount of oil.
  5. Cook the Pancakes: Pour batter into the skillet to form pancakes (about 1/4 cup each). Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Serve: Top the warm pancakes with Coconut Ube sauce or your choice of toppings.

Notes

Spinach: Fresh or frozen spinach works well. Just ensure the frozen spinach is thawed and well-drained before blending. Dairy-Free Options: Any plant-based milk can replace regular milk. Flavor Boosters: Consider adding a pinch of cinnamon or vanilla extract for added flavor.
