Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 3 egg whites (or 1 tablespoon meringue powder mixed with 3 tablespoons water)
  • 4 cups powdered sugar
  • 1 teaspoon lemon juice
  • Food coloring (orange, black, white)

Instructions

  1. Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, and salt.
  2. Cream Butter and Sugar: In a separate bowl, beat the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add Egg and Vanilla: Mix in the egg and vanilla extract until well combined.
  4. Combine Mixtures: Gradually add the flour mixture to the butter mixture, mixing until just combined.
  5. Chill the Dough: Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
  6. Preheat the Oven: Preheat your oven to 350°F (175°C).
  7. Roll Out Dough: On a lightly floured surface, roll out the chilled dough to ¼ inch thickness.
  8. Cut Shapes: Using a pumpkin-shaped cookie cutter, cut out cookies and place them on ungreased baking sheets.
  9. Bake: Bake the cookies for 10-12 minutes or until the edges are lightly golden.
  10. Cool Completely: Let the cookies cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  11. Make Royal Icing: In a bowl, combine egg whites and powdered sugar. Mix until the icing reaches a stiff, spreadable consistency. Add lemon juice and mix well.
  12. Color Icing: Divide the icing into separate bowls and tint with food coloring.
  13. Decorate Cookies: Use piping bags to outline and flood the cookies with royal icing. Allow each layer to dry between applications.
  14. Finish Details: Pipe on details like Jack Skellington’s facial features after the base layer is dry.

Notes

Chill dough before baking to prevent spreading. Use piping bags for precision in decorating.
