A delightful twist on the classic French onion soup, blending rich flavors of caramelized onions with tender pieces of chicken and a creamy broth.

Ingredients

  • 2 tablespoons olive oil
  • 2 medium onions, thinly sliced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked shredded chicken
  • Salt and pepper to taste
  • 1 teaspoon thyme
  • French bread for serving
  • 1 cup shredded Gruyère cheese

Instructions

  1. Caramelize the onions: In a large pot, heat the olive oil over medium heat. Add the sliced onions, cooking them for about 15-20 minutes until they are deeply caramelized. Stir them occasionally to avoid burning.
  2. Add garlic and broth: Stir in the minced garlic and cook for another minute until fragrant. Next, add the chicken broth, thyme, salt, and pepper. Bring the mixture to a simmer and allow it to cook for 10 minutes.
  3. Incorporate cream and chicken: Lower the heat and stir in the heavy cream and cooked shredded chicken. Heat through, ensuring the soup is warm but not boiling.
  4. Prepare for broiling: Preheat your broiler while transferring the soup into oven-safe bowls. Top each bowl with slices of French bread and a generous layer of shredded Gruyère cheese.
  5. Broil the soup: Place the bowls under the broiler until the cheese is bubbly and golden, which should take about 2-5 minutes. Keep an eye on them to prevent burning.
  6. Serve hot: Carefully remove the bowls from the oven and serve immediately.

Notes

For a vegetarian version, substitute chicken with hearty vegetables. Use a good-quality broth for the best flavor.
