Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup frozen mixed vegetables (a blend of carrots, peas, and corn)
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • Salt to taste
  • 1 can (16.3 oz) refrigerated biscuits (can use buttermilk for richer flavor)

Instructions

  1. Combine the chicken breasts, chicken broth, cream of chicken soup, frozen mixed vegetables, chopped onion, garlic powder, black pepper, and salt in a crockpot. Stir well to combine.
  2. Cover the crockpot and cook on low for 6-8 hours or until the chicken is fully cooked and tender.
  3. Shred the chicken about 30 minutes before serving using two forks right in the crockpot.
  4. Add the refrigerated biscuits cut into quarters and gently fold them into the chicken and vegetable mixture.
  5. Cover the crockpot again and cook for an additional 30 minutes or until the biscuits are cooked through and fluffy.
  6. Serve warm by giving it a gentle stir and enjoying your effortless dinner.

Notes

Adjust the cooking time based on your specific crockpot model. Consider using chicken thighs for more flavor or additional vegetables for extra nutrients.
