Ingredients
1 lb chicken (boneless, skinless)
4 cups chicken broth
2 cups all-purpose flour
1 tsp baking powder
1 tsp salt
1/2 tsp pepper
1/2 cup milk
1/4 cup butter (melted)
1/2 onion (chopped)
2 carrots (sliced)
1 celery stalk (sliced)
Instructions
Cook the chicken: In a large pot, bring the chicken and chicken broth to a simmer. Let the chicken cook for about 20 minutes, or until tender. Once cooked, remove the chicken from the broth and shred it into bite-sized pieces.
Prepare the dumpling dough: In a mixing bowl, combine the flour, baking powder, salt, and pepper. Pour in the milk and melted butter. Mix gently until a dough forms.
Shape the dumplings: On a floured surface, roll out the dough to about 1/4-inch thickness. Cut into squares or desired shapes for your dumplings.
Cook the vegetables: In the same pot with the remaining broth, bring it to a boil. Add the chopped onion, sliced carrots, and celery. Allow the vegetables to cook for about 5 minutes, or until slightly tender.
Add dumplings: Drop the dumpling squares into the boiling broth. Cook until they float to the top, about 10 minutes.
Finish with chicken: Return the shredded chicken to the pot, stir to combine, and let it cook for an additional 5 minutes.
Serve hot: Ladle the chicken and dumplings into bowls and enjoy this comforting meal!
Notes
Don’t overwork the dough for light and fluffy dumplings. Use homemade broth for more flavor.
