A comforting and satisfying dish featuring tender chicken, creamy broth, and fluffy dumplings made with Pillsbury biscuits, perfect for a quick family dinner.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups chicken broth
  • 1 cup frozen mixed vegetables
  • 1 can (16.3 oz) Pillsbury refrigerated biscuits
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Optional: Fresh herbs, for garnish

Instructions

  1. Prepare the broth: In a large pot over medium heat, combine the shredded chicken, cream of chicken soup, and chicken broth. Stir until well mixed. Add in the frozen mixed vegetables. Season with garlic powder, onion powder, salt, and pepper.
  2. Heat the mixture: Bring the mixture to a gentle boil. Once boiling, lower the heat and let it simmer for about 5 minutes.
  3. Add the dumplings: Open the can of biscuits and cut each biscuit into quarters. Drop the biscuit pieces into the simmering broth.
  4. Cook the dumplings: Cover the pot and let the dumplings cook for 10-12 minutes. Do not lift the lid during this time.
  5. Serve warm: Once cooked, ladle the chicken and dumplings into bowls. Garnish with fresh herbs if desired.

Notes

Customize the vegetables and be sure to taste the broth before adding dumplings. Avoid lifting the lid while the dumplings cook.
