An effortless and delicious meal that’s perfect for busy weeknights or weekend family gatherings, delivering tender, juicy chicken with minimal prep.

Ingredients

  • 1 whole chicken (about 4-5 pounds)
  • 1 tablespoon olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 lemon, halved
  • Optional: Carrots, potatoes, and onions (chopped)

Instructions

  1. Rub the whole chicken with olive oil, ensuring it’s evenly coated.
  2. Sprinkle salt, black pepper, garlic powder, onion powder, paprika, and thyme all over the chicken, including inside the cavity.
  3. Place the lemon halves inside the cavity of the chicken to infuse moisture and flavor.
  4. Chop the vegetables (if using) and place them at the bottom of the slow cooker.
  5. Place the seasoned chicken on top of the vegetables in the slow cooker. Cover with the lid.
  6. Cook on low for 6-8 hours or on high for 4-5 hours until the chicken is cooked through and the meat easily pulls away from the bone.
  7. Remove the chicken from the slow cooker and let it rest for a few minutes before carving.

Notes

Use a meat thermometer to ensure the chicken reaches 165°F. Let it rest after cooking for juicier meat. Customize seasonings to taste.
