A comforting one-pot meal made in a slow cooker, featuring tender chicken, creamy ranch sauce, and flavor-packed rice.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 packet ranch dressing mix
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 1 ½ cups uncooked long-grain white rice
  • 1 cup mixed veggies (optional)

Instructions

  1. Prepare the chicken: Place the chicken breasts in the slow cooker and season lightly with salt and pepper if desired.
  2. Add the ranch dressing mix over the chicken, then layer on crumbled bacon, cheddar cheese, cream of chicken soup, milk, and uncooked rice.
  3. Combine all the ingredients in the slow cooker, ensuring the chicken is well-coated and the rice is evenly distributed.
  4. Set the slow cooker to low for 6-8 hours or high for 3-4 hours, until the chicken is fully cooked and the rice is tender.
  5. Incorporate vegetables (if using) during the last hour of cooking for added nutrition and color.
  6. Serve and enjoy by shredding the chicken and mixing everything in the slow cooker before serving warm.

Notes

For best texture, use fresh or thawed chicken. Monitor cooking time to prevent overcooking the chicken.
