The ultimate comfort food made simple with your slow cooker. Enjoy tender chicken and fluffy dumplings any night of the week!

Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 can (16 oz) refrigerated biscuit dough

Instructions

  1. Place the chicken thighs in the bottom of the crockpot.
  2. In a bowl, combine the cream of chicken soup, chicken broth, frozen mixed vegetables, onion powder, garlic powder, and black pepper. Stir until well mixed.
  3. Pour the mixture over the chicken thighs in the crockpot, making sure the chicken is well coated.
  4. Cover and cook on low for 6-8 hours or high for 4 hours. Check for doneness; the chicken should be fully cooked and tender.
  5. About 30 minutes before serving, cut the biscuit dough into quarters and drop them into the slow cooker. Make sure they sit on top of the mixture.
  6. Cover and let the dumplings cook until fluffy and cooked through, about 30 minutes.
  7. Scoop a generous portion into bowls and enjoy your comforting meal hot!

Notes

Use chicken thighs for juiciness. Feel free to customize with your favorite vegetables. Consider whole wheat biscuit dough for a lighter version.
