A comforting and flavorful chicken soup with orzo, garlic, and paprika, perfect for any night of the week.

Ingredients

  • 1 pound cooked chicken, shredded
  • 1 cup orzo pasta
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon sweet paprika
  • 1 teaspoon dried mint
  • 4 cups chicken broth or water
  • Crusty bread, for serving

Instructions

  1. Sauté garlic in a large pot with olive oil over medium heat for about 1 minute until fragrant.
  2. Brown the shredded chicken for 3–4 minutes until heated through.
  3. Add tomato paste, sweet paprika, and dried mint to create a savory base.
  4. Pour in the chicken broth and bring to a boil, scraping the bottom of the pot.
  5. Cook the orzo pasta in the boiling soup for about 8–10 minutes until al dente.
  6. Serve the soup warm in bowls with crusty bread.

Notes

Don’t overcook the orzo; it continues cooking after removing from heat. Use fresh garlic for better flavor. Taste as you go to adjust seasoning.
