Ingredients
Protein (choose one):
Chicken breasts or thighs
Tofu or tempeh
2 bell peppers (any color)
1 cup of broccoli florets
1 cup of cherry tomatoes
2 cups of cooked quinoa or rice
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
Fresh parsley or basil (for garnish)
Sliced olives (for garnish)
Instructions
Prepare the grains by cooking quinoa or rice according to package instructions. Fluff it with a fork and set aside.
Sauté the vegetables by heating oil in a skillet over medium heat. Add diced bell peppers and broccoli, cooking for 5-7 minutes until softened.
Add your choice of protein to the skillet. Season with paprika, garlic powder, salt, and pepper. Cook until chicken is 165°F or tofu is golden brown, about 8-10 minutes.
Combine the cooked quinoa or rice and cherry tomatoes, mixing well. Cook for an additional 3-5 minutes until everything is heated through.
Plate the mixture on a decorative platter and garnish with fresh herbs and olives for a spooky effect.
Notes
Don’t overcrowd the pan to prevent steaming. Use fresh vegetables for a better taste. Adjust seasonings according to preference.
